Olive oil & Garlic Spaghetti ~ Spaghetti Olio e Aglio

This is a basic Italian staple. Can be served as a pasta course, a side with your meat…or just a delicious snack! Quick and easy to prepare. Full of flavor.

Ingredients

  • 450 g (1 lb) dried Spaghetti
  • 125 ml (1/2 c) Olive oil
  • 3 cloves garlic, pressed or minced
  • Salt & Pepper
  • Bunch of Parsley, chopped

Preparation

  1. Bring a pot of water to boil for the pasta. When the water comes to a boil, add salt. Add spaghetti, bring back to a boil, can cook 8-10 minutes until al dente.
  2. Meanwhile, in a large skillet heat the olive oil over medium-low heat. Add the garlic and a pinch of salt. Cook over low heat stirring constantly for 3-4 minutes, or until garlic is golden. (Do not brown the garlic as this can cause a bitter taste.) Remove the pan from the heat.
  3. Drain the pasta and then add to the garlic oil. Toss to coat the pasta well. Then add chopped parsley and season with salt & pepper. Toss well. Serve immediately.
