This is one of Vittoria’s vegan recipe creations. She developed this recipe to be full of flavor! Sweet & savory & smoky BBQ all in one! Using shredded jackfruit gives the perfect pulled pork texture.
If you’d like a simple pulled-pork filling…you can omit the sweet peppers and pineapple.

Ingredients
- Olive oil
- 1/2 cup diced Red Onion
- 2 cloves Garlic, minced
- 1/2 cup diced Red pepper
- 20 oz can Jackfruit, drained & shredded
- 1 tsp Paprika
- 1 tsp Chili powder
- 1 tsp Liquid smoke
- 1/2 cup Pineapple, diced (grilling the pineapple slices before you dice adds a nice flavor)
- 1/3 cup Barbecue Sauce—your favorite flavor
- 4 large Hamburger Buns
Preparation
- Put skillet over medium high heat. Drizzle in some oil, add the onion and garlic. Stir, sauté for a few minutes, until the onion becomes transparent.
- Add red pepper to skillet, continue to sauté until onion and garlic begin to brown. Then add the paprika and chili powder, stirring until the seasoning is evenly distributed.
- Add the shredded jackfruit and stir until well combined.
- Pour in the liquid smoke, and stir well.
- Add the pineapple. After about 1 minute, remove from heat.
- Lightly oil buns. Toast on grill or skillet.
- Fill buns with the “pulled-pork” and enjoy!
