Roasted Fennel

Ingredients

  • 2-3 Bulbs of Fennel
  • Olive oil
  • Salt & Pepper
  • Grated Parmesan

Preparation

  1. Drizzle olive oil in the bottom of a roasting dish.
  2. Slice the fennel. Spread the slices in the bottom of the roasting dish. Top with another drizzle of olive oil, add salt and pepper.
  3. Roast in oven for 10-15 minutes. Stir and roast for another 10-15 minutes.
  4. Stir the fennel one more time, sprinkle a generous layer of Parmesan cheese. Return to the oven for another 5-10 minutes.
