Vittoria’s Lemon Spaghetti

This is super easy to prepare, full of flavor. You’ll be making this again and again!

Ingredients

  • 2 lemons, zest and juice
  • 1 onion, diced
  • 2-3 cloves of garlic, minced
  • 1 can coconut milk
  • 4 cup vegetable stock
  • 1-2 tsp red pepper flakes
  • 1 lb/500ml spaghetti
  • 2 cups spinach
  • 2 cups broccoli rabe
  • salt & pepper

Preparation

  1. Heat a few TBSP olive oil in pot over med/high heat. Sauté onion and garlic until softened. Zest the lemon into the pot.
  2. Add lemon juice, coconut milk, vegetable stock, red pepper flakes and the pasta. Cover.
  1. Bring to boil. Turn down heat to medium/low. Add spinach, broccoli rabe, salt & pepper to taste. Cover.
  2. Simmer until pasta is al dente and liquid is absorbed.
