Slouvaki

This marinade can be used for chicken, beef, lamb and/or vegetables. You can mix the meat and vegetables on skewers to grill. Or you can do only meat or only vegetables. You will love the flavors and surely you’ll find your favorite way to enjoy this Greek marinade.

Ingredients

  • 1lb/500g Chicken, beef, lamb or mushrooms
  • 2 Sweet bell peppers
  • 2 red onions
  • 2 small zucchini
  • 4 cloves garlic, minced
  • 1/2 cup/125ml olive oil
  • 1/2 cup/125ml lemon juice
  • 1/4 cup/75ml rice wine vinegar
  • Fresh herbs: parsley, mint, oregano
  • skewers for grilling

Preparation

  1. Prepare marinade: In a bowl or large liquid measure combine the garlic, olive oil, lemon juice, vinegar and herbs. Whisk to emulsify. Set aside.
  2. Prepare the meat: Cut meat into 1″/2-3cm cubes. Put into a large zip-lock bag or a bowl, pour 1/3-1/2 of the marinade. Mix to coat. Seal/cover and refrigerate.
  3. If using mushrooms. Clean & remove or trim stems.
  4. Clean peppers, cut into pieces similar in size to the meat or mushrooms.
  5. Cut onion into pieces similar size to the peppers. Break apart a little, but do not separate completely.
  6. In a baking dish or a large zip-lock bag, combine vegetables and pour over 1/2 of the remaining marinade. (Reserving some marinade.)
  7. After marinating for approximately 30 minutes, assemble the skewers. Cook skewers on the grill or roast in oven.
  8. To serve, drizzle with remaining marinade and enjoy!
