Definitely a highlight of our trip was our visit to Hutsadin Elephant Foundation where volunteers care for rescued elephants. We signed up for the Mahout (elephant caregiver) experience and helped feed some elephants, and were even able to take an elephant for a walk!
The first cooking class was a private experience with Maple and David. (ThaiFoodEmporium.com.)
They brought us to the morning market in Hua Hin and taught us how to navigate our way through in order to purchase the ingredients for the dishes we would prepare.
Then a after a short tuck-tuck ride we arrived at their home. We prepared three delicious dishes that we enjoyed eating, and we left with the recipes that we have enjoyed working with at home!!

Sara and I traveled to Hua Hin, Thailand for our 30th anniversary. We enjoyed quite an adventure. We stayed at a beautiful condo complex at the ocean that had lagoon pools, infinity pool and an amazing beach.

This was our first time traveling to Arizona. Sara’s parents moved to SunCity (just north of Phoenix) in 2017. So just after Victoria and I returned from the HJ Live Hair Show in Manchester, England, October 2018, Sara and I boarded a flight to AZ!
We enjoyed the relaxed visit with her mom and dad. And ate as much Mexican food as we could!!!

We traveled to Sedona and the Grand Canyon. A helicopter tour into the Grand Canyon was definitely a once-in-a-lifetime experience!!!
Last year we rescued a 3-year-old Italian Corso. He was suffering from Leishmaniasis, caused by a parasite transmitted by a sandfly. 😏 When we found Arturo, he was had been existing in a sad condition for almost 2 years.

We brought him home and gave him a big yard and bed. Our vet started him on a 6-month regime and he responded well to the medication.

P.S. In the meantime one of our other rescues, Lorenzo, found his forever home here in Sicily and is happy with his new family.

Vittoria and I are on our way to the HJ LIVE conference held in Manchester, England. There is a ramen restaurant across the street from our hotel! Yum!!
When we visited Pescara this summer to attend Pioneer Ministry School we had the opportunity to taste the local speciality. Our friends served up a feast which included a traditional Abruzzese cuisine from the Italian region of Abruzzo.
The arrosticini. Beautiful small scewers of lamb slow roasted over charcoal. So…when we got home to Sicily we searched online and ordered our own arrosticini grill from amazon.it. And we found prepared arrosticini skewers at Alta Sfera (prepared frozen )
They are delicious grilled and topped with a little sea salt. Also good when adding some olive oil seasoned with pecorino pepper !! 🌶
