Baked Brie with Roasted Figs & Walnuts

This is an easy & delicious recipe. You can bake with or without the puff pastry.

Ingredients

  • 5 ripe Figs, halved
  • 1 round Brie cheese
  • 1 sheet puff pastry dough
  • 140 mL (1/3 cup) raw Honey
  • 2 tbsp olive oil
  • 1/8 tsp ground nutmeg
  • 1/2 cup walnuts, roughly chopped
  • 1 stick of bread, sliced (& toasted, if desired)

Preparation

  1. Preheat oven 350* (175C)
  2. Place figs on a baking sheet, cut side up. Drizzle lightly with olive oil.
  3. Bake figs for 15 minutes. Remove from oven.
  4. Raise oven temperature to 375* (190C)
  5. Line baking sheet or oven safe dish with parchment paper. Spread the pastry dough. Place Brie round in the center. Top with a few of the Roasted figs. Fold the pastry up over the top to close.
You can brush with an egg wash, butter or a little olive oil before baking

6. Bake until the pastry is lightly toasted, 20-30 minutes.

7. Meanwhile, in a small saucepan combine honey, walnuts and nutmeg. Heat over medium heat until honey is more liquid. Remove pan from the heat.

8. Remove pastry from the oven. Place on serving dish. Top with roasted figs and then pour on the honey and walnut topping. Allow to cool slightly before serving.

9. Serve with sliced bread.

If you prefer, you can bake the Brie without the pastry. Bake on parchment paper only 12-17 Minutes (without fruit topping). Then continue with step 7
