Fig & Goat Cheese Tartines

Ingredients

  • 4 large ripe Figs
  • 1 tbsp fresh Rosemarry
  • 4 slices fresh crusty bread
  • 1 clove garlic
  • 120 g (4 oz) Goat cheese or whipped Philadelphia
  • 120 g (4 oz) thinly sliced Prosciutto
  • Honey
  • Balsamic glaze
  • Olive oil
  • Salt & pepper

Preparation

1. Slice figs, 1/4-1/2” (1 cm) thick. Heat a grill pan over medium-high heat. Lightly brush with oil. When hot, place figs in the pan. Cook 1-2 minutes per side, or until soft and have grill marks. Remove from pan and place on a plate.

2. Prepare the bread: In small dish or plate season olive oil with salt and pepper. Brush seasoned oil onto both sides of bread slices. Toast under a broiler, flip to toast both sides.

3. Place toasted bread on serving dish. Take clove of garlic, rub garlic over the top of bread slices to infuse with the garlic.

4. Using a knife, spread cheese over the toasted bread. Tear the prosciutto and arrange over the cheese. Top with slices of figs. (*Note: tearing the prosciutto help when eating, so you don’t pull all of the toppings when you take a bite 😉)

5. To finish, sprinkle rosemary over the tartines, drizzle with balsamic glaze and honey. Enjoy
