Ingredients
- 3 TBSP olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red pepper, diced
- 1/2 cup green olives, sliced
- 1/2 cup Kalamata olives, sliced
- 1 can cannellini beans, drained
- 1 cup cherry tomatoes, halved
- 2 TBSP capers
- 1 tsp oregano
- 1 tsp hot pepper flakes
- 1 tsp parsley
- 1 tsp garlic powder
- 1/4-1/2 cup water
- salt & pepper
Preparation
- In a large skillet, heat 3 TBPS olive oil over medium/high heat. Add onion and garlic. Cook for a few minutes, until onion softens.
- Add red pepper. Continue to sauté for a few minutes.
- Stir in the olives. Followed by the cannellini beans and tomatoes. Continue sautéing.
- Add spices, and allow the mixture to caramelize a little.
- Pour in water and allow to cook until most of the water is absorbed. Season with salt & pepper to taste.
- Prepare some toasted crostini. Rub with a garlic clove for some extra flavor.
