Puttanesca Bruschetta

Ingredients

  • 3 TBSP olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red pepper, diced
  • 1/2 cup green olives, sliced
  • 1/2 cup Kalamata olives, sliced
  • 1 can cannellini beans, drained
  • 1 cup cherry tomatoes, halved
  • 2 TBSP capers
  • 1 tsp oregano
  • 1 tsp hot pepper flakes
  • 1 tsp parsley
  • 1 tsp garlic powder
  • 1/4-1/2 cup water
  • salt & pepper

Preparation

  1. In a large skillet, heat 3 TBPS olive oil over medium/high heat. Add onion and garlic. Cook for a few minutes, until onion softens.
  2. Add red pepper. Continue to sauté for a few minutes.
  3. Stir in the olives. Followed by the cannellini beans and tomatoes. Continue sautéing.
  1. Add spices, and allow the mixture to caramelize a little.
  2. Pour in water and allow to cook until most of the water is absorbed. Season with salt & pepper to taste.
  3. Prepare some toasted crostini. Rub with a garlic clove for some extra flavor.
