Sesame Chicken Salad Wonton Cups

This is a delicious salad-in-a-cup! Sure to be a crowd pleaser. Beautiful presentation. Delicious flavors. Easy to prepare!

Ingredients

  • 1lb/500g chicken breast
  • 2 TBSP olive oil
  • salt & pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika (sweet or spicy, as you’d prefer)
  • 2 TBSP mayonnaise
  • 2 TBSP soy sauce
  • 2 TBSP cilantro, chopped
  • 1/2 cup carrot, shredded
  • 1/2 cup snow peas, thinly sliced
  • 1/2 cup scallions, thinly sliced
  • 2 TBSP basil, chopped
  • 2 TBSP parsley, chopped
  • Black sesame seeds
  • 24 wonton wraps
  • Cooking spray

Preparation

  1. Roast the chicken: In a small roasting pan, place the chicken breast. Drizzle with olive oil. Season with salt & pepper, garlic powder and paprika to your taste. Roast at 350F/175C until internal temperature of chicken reaches 165F/74C. Remove from oven allow to cook.
  1. In a small bowl blend together the mayonnaise, tahini, soy sauce and cilantro. Whisk to combine well to form the salad dressing.
  2. In a medium/large bowl add the carrot, snow peas, scallions, basil and parsley.
  3. Chop the roasted chicken into small cubes. Stir into the vegetables.
  4. Pour the dressing over the salad. Stir well to combine and coat the salad evenly. Add sesame seeds.
  1. Prepare the wonton cups: Take a single wonton, spray each side with cooking spray. Press into a mini muffin tin. Try to make sure that the top is spread open, so after it is baked it will be easy to fill with salad.
  2. Bake wontons in 350F/175C oven for 15 minutes, or until light golden brown.
  3. Fill each cup with some of the salad. Enjoy!
