Thai Basil Fried Rice

This is another family favorite! You can even add some stir-fried chicken, pork, beef or tofu and this is a meal! Watch Vittoria prepare this on YouTube

Ingredients

  • 4 cups cooked (cold) basmati or jasmine rice
    • Cook 2 cups rice/4 cups water in the morning or the day before. Fluff the rice when it is finished cooking. Then refrigerate until you are ready to make your fried rice.
  • 6 TBSP oyster sauce
  • 4 TBSP fish sauce
  • 2 tsp raw sugar
  • 1/2 cup sunflower or vegetable oil
  • 6 cloves garlic, minced
  • 3 Thai bird chili peppers, sliced
  • 1 tsp chili pepper flakes
  • 1 sweet bell pepper, sliced into thin strips
  • 1 onion, sliced into thin strips
  • a bunch of Thai basil

Preparation

  1. Whisk together oyster sauce fish sauce and sugar. Set aside.
  2. Heat wok with oil over high heat. Add garlic, bird peppers and chili pepper flakes. Stir-fry for a minute.

  1. Add sweet pepper and onion (and some strips of chicken if you’d like). Stir fry until cooked.
  2. Add the prepared sauce. Stir-fry another minute.
  3. Stir in the rice. Remove from heat. Add fresh basil, And its ready to eat!
