Apple Dapple Cake

Todd shares one of his mother’s signature desserts. This was a special family recipe that was kept secret. But it’s so easy to make, and soooo delicious, that we just have to share it! You can watch Todd make this on Todd & Vittoria’s Food Adventures.

Ingredients

For the Cake

  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla
  • 3 cups chopped apples
  • 1 1/2 cups chopped walnuts
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

For Caramel Syrup

  • 2 cups brown sugar
  • 1/2 cup light cream
  • 2 sticks butter

Preparation

  1. Preheat oven to 350F. Prepare bunt cake pan (grease & flour)
  2. In mixing bowl, mix oil and sugar. Then add eggs, mix well.
  3. Add dry ingredients, then vanilla. Stir in apples and walnuts.
  4. Pour batter into bunt pan. Bake for 1 hour.
  5. When you remove the cake from the oven and while cake is cooling (still in the pan) prepare the caramel syrup.
  6. For caramel syrup: Put ingredients into saucepan. Cook over medium heat, stirring, until butter has melted and sugar has dissolved.
  7. Prick holes in the top of the cake with a knife (I like to wiggle it a little to make a good space for the caramel to fill). Pour caramel syrup into holes and all around edges of cake, pulling cake away from pan with knife as you pour, a little at a time, using half of the caramel syrup.
  8. When serving, use the reserved caramel syrup to pour over each piece. Reheat syrup as needed.
