Ingredients
- 2 lb/1kg chicken pieces
- 1/2 cup prunes, chopped
- 1/2 cup dried cranberries or raisins
- 1/2 cup dried apricots, chopped
- 20oz/600g fruit preserves. Apricot, peach and/or orange marmalade
- 1 cup chicken stock
- salt & pepper
Preparation
- Place the chicken pieces in a baking dish that allows them to lay in a single layer.
- Top with the dried fruit. Spoon on the fruit preserves. (Don’t worry about spreading it out evenly as it cooks, the preserves will melt, and disperse.)
- Salt & pepper to taste. Pour over chicken stock
- Roast in 350F oven for 30-40 minutes. Remove from oven and turn chicken pieces. Baste as needed.
- Return to oven for another 30-40 minutes. Remove from oven. Turn chicken pieces once more and return to oven for a final 10-15 minutes, or until chicken is cooked & browned. The glaze should be thickened.
We enjoy serving Fruited Chicken over egg noodles. Also delicious with potatoes or rice.
