Fruited Chicken

Ingredients

  • 2 lb/1kg chicken pieces
  • 1/2 cup prunes, chopped
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup dried apricots, chopped
  • 20oz/600g fruit preserves. Apricot, peach and/or orange marmalade
  • 1 cup chicken stock
  • salt & pepper

Preparation

  1. Place the chicken pieces in a baking dish that allows them to lay in a single layer.
  2. Top with the dried fruit. Spoon on the fruit preserves. (Don’t worry about spreading it out evenly as it cooks, the preserves will melt, and disperse.)
  3. Salt & pepper to taste. Pour over chicken stock
  4. Roast in 350F oven for 30-40 minutes. Remove from oven and turn chicken pieces. Baste as needed.
  1. Return to oven for another 30-40 minutes. Remove from oven. Turn chicken pieces once more and return to oven for a final 10-15 minutes, or until chicken is cooked & browned. The glaze should be thickened.

We enjoy serving Fruited Chicken over egg noodles. Also delicious with potatoes or rice.
