Nonna Perillo’s Lemon Garlic Chicken

Ingredients:

  • 1kg Chicken pieces. Bone-in. (2 1/2 lb)
  • 1 1/2 cup Fresh lemon juice
  • 2 bulbs of Garlic, crushed
  • 3/4 cup Olive oil
  • 4 tablespoons dried Oregano
  • 3 tsp Salt
  • 2 tsp Pepper

Preparation:

1. Prepare marinade. Mix the lemon juice, oil, garlic and herbs together. Pour over chicken pieces. And allow to marinate for 1-2 hours.

2. Place chicken pieces in a roasting pan. Pour marinade over the chicken. Bake at 350*F

3. After 45 minutes/1 hour, turn chicken pieces, and return pan to oven. After another 45 minutes, turn chicken pieces again. Allow to cook until the chicken pieces are browning and lemon sauce should be reduced.

4. Remove from oven. If you would like the lemon sauce to reduce more, pour into saucepan and simmer to reduce. Or you can thicken with a rue (1/4 c cold water, whisk in 1 tbsp corn starch. Stir the lemon sauce briskly as you pour in the rue.) Allow to simmer.
