Ingredients
- 2 Chicken breasts
- 2 cups stuffing **
- Seasoned bread crumbs
- Olive oil
- Fresh thyme, to garnish
Preparation
- Prepare chicken breast: Remove bones. Filet to create a few strips of chicken. Pound if necessary to achieve even thickness.
- For each chicken filet, place a generous spoonful near short edge. Then roll the chicken to enclose the stuffing. Place in baking pan seam-side down.
- After stuffing all of the chicken. Drizzle with olive oil. Sprinkle with seasoned bread crumbs. Salt and pepper to taste.
- Bake in preheated oven at 325-350*(160-175C) for 35-45 minutes. Or until chicken is cooked.
- To serve: Slice through the meat rolls. Drizzle with gravy and top with fresh thyme.
