Aunt Stella’s Roasted Red Peppers — I Peperoni Arrostiti di Zia Stella

Cooking In Sicily: Episode 1

  • 8 Large Red Peppers ( I also like using orange or yellow peppers too)
  • 4 large cloves of garlic, peeled and crushed
  • Juice of two large lemons
  • 1/4 cup olive oil
  • salt and pepper to taste

Place whole peppers on a hot grill.  Turn the peppers as each side blackens.  (If you prefer, you can roast in oven under broiler.)

Once all sides of peppers are blackened, place the cooked peppers into a paper bag (or cover in a bowl).  As the peppers cool inside the bag the skins will separate.  When the peppers are cool enough to handle, peel off skin and remove seeds.

Tear the peppers into thin strips and place into a bowl.  Add garlic, lemon juice, olive oil and salt and pepper.

Stir together.  Chill and allow the flavors to meld.  Enjoy!

My favorite way to eat Roasted Peppers,,,,,on their own 😉 ,,,,With hot crusty bread (I prefer con sesame),,,,with provolone cheese, with brie, with olives,,,,,OR paired with grilled sausage. 🙂
