Grilled chicken Caesar Salad as seen prepared by Vittoria on Todd & Vittoria’s Sicilian Food Adventures YouTube channel
Salad ingredients:
- One large head of romaine lettuce
- One whole chicken breast, fillet
- 1/2 stick of Italian bread
- One cup of cherry tomatoes
- Shaved parmesan cheese
- Olive Oil for toasting bread
Ingredients for Salad dressing and Marinade for Chicken:
- 1/2 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- 3 cloves garlic
- 1 tsp salt
- 1 tsp ground pepper
- 2 TBSP anchovy paste
Preparation:
- Put all ingredients listed for the salad dressing & marinade into food processor or blender and run for a few seconds, until blended and garlic is broken down.
- Place chicken fillets into a plastic food storage bag, and pour enough of the dressing into the bag to cover the chicken. Seal the bag and place in refrigerator for 1-2 hours.
- Chop romaine lettuce into bite size pieces. Wash, and place into salad bowl. Add cherry tomatoes. (I like to slice them in half.) Set aside.
- Preheat barbeque. Cut bread into 1″ cubes. Load the bread cubes onto barbeque skewers. Paint the bread lightly with oil and salt and pepper. Carefully toast the bread on the grill. Don’t walk away, they can toast quickly, especially if the oil drips into the grill. 😉 Set the croutons aside.
- Grill the chicken. Slice into strips.
- Toss lettuce and tomatoes with salad dressing. Serve salad into individual plates or bowls. Lay strips of chicken over the top of the salad. Add some croutons, and shave parmesan cheese. And it’s ready to enjoy.
