This is the perfect side dish for a summer meal. Can be cooked on a barbecue or on a grill pan on your stove.
Ingredients
- 2 TBSP Fresh lemon juice
- 2 TBSP White wine vinegar
- 1 TBSP Minced garlic
- 2 tsp Fresh thyme
- 1/2 cup (125 mL) olive oil
- Salt & pepper
- 2 lb (900 g) Zucchini
Preparation
- Prepare the marinade in a large bowl. Add: lemon juice, vinegar, garlic, thyme, salt & pepper. Whisk together
- Slowly add in the oil while whisking.
- Prepare the zucchini. Wash, clean. Cut into quarters or slice lengthwise. Add the zucchini to the marinade and toss to coat.
- Cover and marinate for a few hours or up to a day.
- Grill on medium-high heat. Turning occasionally until they are browned. About 8-10 minutes.
- Transfer zucchini to a serving dish. Drizzle with excess marinade. Serve hot or chilled.
- Sprinkle with fresh thyme to serve.
