Roasted Potatoes, Peppers, Onions & Sausage

Ingredients

  • 1 kg (2 lb) Italian sausage, cut into 2cm (3/4”) pieces
  • 3-4 Sweet Bell Peppers, diced 2cm (3/4”)
  • 1 1/2 – 2 kg (2 lb) potatoes, diced 2cm (3/4”)
  • 2 large onions, diced 2cm (3/4”)
  • 8 cloves garlic, diced or pressed
  • Olive oil
  • Red pepper flakes, to taste
  • Salt &pepper

Preparation

1. Preheat oven 190C (375F)

2. In a large roasting pan, drizzle olive oil. Add the vegetables and sausage followed by the garlic and herbs. Season to taste. Drizzle more olive oil. Stir to coat evenly.

3. Put roasting pan in oven for30- 45 minutes. Remove from oven and stir.

4. Return pan to oven, and roast for another 30-45 minutes. Cook until ingredients are browned to your liking.
