Ingredients
- 2 lemons, zest and juice
- 1 onion, diced
- 2-3 cloves of garlic, minced
- 1 can coconut milk
- 4 cup vegetable stock
- 1-2 tsp red pepper flakes
- 1 lb/500ml spaghetti
- 2 cups spinach
- 2 cups broccoli rabe
- salt & pepper
Preparation
- Heat a few TBSP olive oil in pot over med/high heat. Sauté onion and garlic until softened. Zest the lemon into the pot.
- Add lemon juice, coconut milk, vegetable stock, red pepper flakes and the pasta. Cover.
- Bring to boil. Turn down heat to medium/low. Add spinach, broccoli rabe, salt & pepper to taste. Cover.
- Simmer until pasta is al dente and liquid is absorbed.
