Arugula Salad & White Wine Vinaigrette

Vinaigrette

Ingredients

  • 1/2 cup Olive Oil
  • 1/3 cup white wine vinegar
  • 1 clove garlic, crushed (or 1/2 tsp garlic powder)
  • 1 tsp mustard
  • salt & pepper to taste

Preparation

Combine all ingredients in a jar or shaker, or whisk well in a bowl. Refrigerate any unused portions to use with your next salad.

Salad

Ingredients

  • One bag of baby arugula washed and spun dry
  • 1/2 onion thinly sliced
  • 1 cup grape tomatoes, halved
  • 1/2 cup canned corn, drained
  • shaved Parmesan cheese
  • you may like to add a can of tuna crumbled over the top

Preparation

Put all ingredients into salad bowl. Drizzle with desired amount of dressing.  Toss to coat.  Then enjoy.
