Mediterranean Chickpea Salad

Ingredients

  • 1 can chickpea, drained
  • 1 can sweet corn, drained
  • 1 red pepper, diced
  • 1 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup Kalamata olives
  • 1 cucumber, diced
  • 8 oz/225g fetta cheese, coarsely crumbled
  • 1/4 cup/60ml olive oil
  • 1/4 cup/60ml lemon juice
  • 1 TBSP fresh chopped/ 1 tsp dried oregano
  • 1 TBSP fresh parsley, chopped
  • 1 TBSP fresh mint, chopped
  • 1/2 tsp chili flakes
  • 1/2 tsp garlic powder
  • salt & pepper to taste

Preparation

  1. In salad bowl combine chickpeas, corn, pepper, onion, fetta, tomatoes, olives and cucumber.
  2. In a bowl or liquid measure combine the rest of the ingredients. Whisk to emulsify. Pour over the salad. Stir gently to combine. Enjoy!
