Jackfruit “Pulled-Pork” Taco

Taco Ingredients

Ingredients

  • 4 Pineapple slices
  • 20 oz Young Green Jackfruit, drained
  • Olive oil
  • 1 Red onion, small dice (1/2 cup)
  • 1 red pepper, small dice
  • 1 jalapeño pepper diced/1 tablespoon sliced chili pepper (optional)
  • 2 cloves Garlic, minced
  • 1/2 cup Barbecue sauce
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 2 tsp Cumin
  • 1 tsp Cayenne pepper

To serve: Tortillas, chopped cilantro, lime wedges

Preparation

  1. Grill the pineapple slices on a barbecue or using a grill pan on the stove. When cooled a little, dice the pineapple. Set aside.
  2. Shred the jackfruit. Set aside.
  3. In large skillet drizzle some olive oil, turn on medium high heat. Add diced onions, red pepper, jalapeño and garlic. Sauté for a few minutes or until they are starting to brown. Turn heat down to medium.
  4. Add the jackfruit and spices to the skillet. Stir well to combine and heat through.
  5. Remove from heat, stir in the pineapple.
  6. To serve: Spoon the filling into a soft tortilla. Sprinkle with cilantro. Squeeze fresh lime juice. Enjoy!!!
