Ingredients
- 4 Pineapple slices
- 20 oz Young Green Jackfruit, drained
- Olive oil
- 1 Red onion, small dice (1/2 cup)
- 1 red pepper, small dice
- 1 jalapeño pepper diced/1 tablespoon sliced chili pepper (optional)
- 2 cloves Garlic, minced
- 1/2 cup Barbecue sauce
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Paprika
- 1 tsp Chili powder
- 2 tsp Cumin
- 1 tsp Cayenne pepper
To serve: Tortillas, chopped cilantro, lime wedges
Preparation
- Grill the pineapple slices on a barbecue or using a grill pan on the stove. When cooled a little, dice the pineapple. Set aside.
- Shred the jackfruit. Set aside.
- In large skillet drizzle some olive oil, turn on medium high heat. Add diced onions, red pepper, jalapeño and garlic. Sauté for a few minutes or until they are starting to brown. Turn heat down to medium.
- Add the jackfruit and spices to the skillet. Stir well to combine and heat through.
- Remove from heat, stir in the pineapple.
- To serve: Spoon the filling into a soft tortilla. Sprinkle with cilantro. Squeeze fresh lime juice. Enjoy!!!
