Ingredients
- 1-2 bunches fresh Broccoli Rabe
- 4-6 cloves of garlic, crushed or finely minced
- Chili pepper flakes
- Salt & pepper
- White wine
- Parmesan cheese
Preparation
1. Wash the broccoli rabe. Cut into 1” (2-3cm) pieces. Keep stems separate from leaves and flowers.
2. Heat a few tablespoons of olive oil in a large skillet over medium high heat. Add garlic. Sauté for 1-2 minutes. Add stems of broccoli rabe. Continue to sauté for a few minutes, stirring occasionally.
3. Add seasoning: salt, pepper, chili pepper flakes to taste. Stir to meld. Add the rest of the broccoli rabe. Stir to coat with oil. **Add in batches if it will not all fit in the pan. As the leaves wilt, continue to add and stir well.
4. Add white wine. 1/2 – 1 cup (100-250 mL) and continue to cook until the greens wilt.
5. Add plenty of fresh grated Parmesan cheese. Stir to melt. Take off of heat. Let rest for a few minutes.
6. To serve top with a little more freshly greeted Parmesan cheese.
