Cauliflower Steak with Broccoli Rapini & Asiago Cheese

A delicious way to prepare cauliflower. It is easy and packed full of flavor. You can serve this as a side dish, or enjoy it as a meal!! Really, because it is that good!!

Ingredients

  • One large, or 2 medium heads of cauliflower
  • 2 bunches broccoli rapini (broccoli rabe)
  • 2 cloves of garlic, pressed
  • 1-2 lemons (zest & juice)
  • olive oil
  • salt & pepper
  • 2 cups grated asiago cheese

Preparation

  1. Cut broccoli rabe into 1-2″ pieces.
  2. Prepare the cauliflower. Cut from top to bottom, 1″ slices.
  3. Brush a non-stick baking sheet with olive oil. Arrange the cauliflower steaks on the pan.

  1. In a bowl, whisk together 1/4 cup olive oil, lemon juice, salt & pepper. Brush 1/2 of the mixture over the cauliflower steaks.
  2. Roast cauliflower in 400F oven for 25-35 minutes.
  3. Meanwhile, heat a sauté pan with a couple of TBSP olive oil. Crush the garlic into the pan. Add the broccoli rapini, stir to sauté. Zest the lemon onto the broccoli rapini. Cook until tender. Set aside.
  1. Remove cauliflower from oven, carefully flip over (using 2 spatulas). Brush the browned side of the cauliflower with the remaining sauce.
  2. Lower the oven temperature to 350F. Return the cauliflower to the oven to cook for another 15 minutes.
  3. Remove the cauliflower from the oven. Top with the broccoli rapini and asiago cheese. Return to the oven for another 10 minutes, or until cheese is melted. Serve hot.
