This is a typical Sicilian dish. There are various ways to prepare eggplant rolls, but this is one that we love 💕

Ingredients:
- 2 medium eggplants. Sliced 5mm (1/8-1/4”) lengthwise
- 1 small onion, finely diced
- 1 tablespoon raisins
- 1 tablespoon pine nuts
- 6 Piccadilly tomatoes, diced.
- 1/2 c bread crumbs
- 50 g grated cheese
- 300 g provolone, cut into sticks (shape of french fry)
- 200 ml tomato sauce
- Grated cheese for topping
- Basil to garnish
- Salt/pepper
Preparation:
1. Slice the eggplant. If desired, salt and place in colander to drain.
2. In pan, drizzle olive oil. When heated fry onions. Then add raisins and pine nuts. Add diced tomatoes, salt, 1/2 c water. Simmer until water is absorbed.
3. Add bread crumbs and grated cheese. Stir to combine. Set aside.
4. If you have salted the eggplant slices, rinse and pat dry.
5. Fry the eggplant slices in pan with a little olive oil until golden. Do not over cook. You want the eggplant to be soft enough to roll.
6. After frying all of the eggplant, Take each piece one at a time. Put a spoonful of breadcrumb filing and a wedge of provolone cheese. Roll the eggplant.
7. Place rolled eggplant into lightly oiled baking pan. Bake for 15 minutes at 200C/395F
8. To serve, top with fresh tomato sauce, grated cheese and fresh basil.
