Ingredients:
- 3 cups Brussels sprouts, halved
- 3 cloves Garlic, sliced
- Olive oil
- Salt & Pepper
- 1 Apple, cored and diced
- 1/2 cup Walnuts
- 1/2 cup Pomegranate seeds
- Balsamic glaze
- Apple cider glaze
Preparation:
- Preheat oven 400F
- In roasting pan toss brussels sprouts & garlic with olive oil, salt & pepper. Roast for 30 minutes, stirring occasionally. You are looking for the brussels sprouts to get browned and toasted.
- Add apple, stir to combine, and continue to roast 10-15 minutes.
- To finish: Toss the roasted ingredients adding the walnuts and pomegranate.
- Drizzle with balsamic and apple cider glaze as desired.
