Roasted Brussels Sprouts with Pomegranate & Apple Balsamic Glaze

Ingredients:

  • 3 cups Brussels sprouts, halved
  • 3 cloves Garlic, sliced
  • Olive oil
  • Salt & Pepper
  • 1 Apple, cored and diced
  • 1/2 cup Walnuts
  • 1/2 cup Pomegranate seeds
  • Balsamic glaze
  • Apple cider glaze

Preparation:

  1. Preheat oven 400F
  2. In roasting pan toss brussels sprouts & garlic with olive oil, salt & pepper. Roast for 30 minutes, stirring occasionally. You are looking for the brussels sprouts to get browned and toasted.
  3. Add apple, stir to combine, and continue to roast 10-15 minutes.
  4. To finish: Toss the roasted ingredients adding the walnuts and pomegranate.
  5. Drizzle with balsamic and apple cider glaze as desired.
