Ingredients:
- 1/4-1/2 cup (90-180g) diced smoked Pancetta or Bacon
- 1 Onion, sliced medium-thin
- 3 cups Brussels sprouts, halved
- 2 TBSP of Butter
- Olive oil
- 2 TBSP fresh Thyme
- Zest of one Lemon
- Juice of 1/2 Lemon
- 1/4 cup dry white wine
Preparation:
- In a medium sized skillet, on medium high heat, brown the pancetta. Then remove from the pan, set aside.
- In the same pan add the onions. Stir around in the pan drippings. Then add the Brussels sprouts and stir in well.
- Sauté until the Brussels sprouts are getting browned.
- Add butter, drizzle of olive oil, lemon zest and thyme. Continue to cook, stirring gently.
- To finish, stir the lemon juice and wine. After about a minute remove from heat and serve.
These are delicious as a side dish. Also they can be tossed over some pasta and become a main dish. Add some grated Parmesan cheese if desired.
