Sautéed Brussels Sprouts

Ingredients:

  • 1/4-1/2 cup (90-180g) diced smoked Pancetta or Bacon
  • 1 Onion, sliced medium-thin
  • 3 cups Brussels sprouts, halved
  • 2 TBSP of Butter
  • Olive oil
  • 2 TBSP fresh Thyme
  • Zest of one Lemon
  • Juice of 1/2 Lemon
  • 1/4 cup dry white wine

Preparation:

  1. In a medium sized skillet, on medium high heat, brown the pancetta. Then remove from the pan, set aside.
  2. In the same pan add the onions. Stir around in the pan drippings. Then add the Brussels sprouts and stir in well.
  3. Sauté until the Brussels sprouts are getting browned.
  4. Add butter, drizzle of olive oil, lemon zest and thyme. Continue to cook, stirring gently.
  5. To finish, stir the lemon juice and wine. After about a minute remove from heat and serve.
Step 2

These are delicious as a side dish. Also they can be tossed over some pasta and become a main dish. Add some grated Parmesan cheese if desired.
