Zucchini Marinated & Grilled ~ Zucchine Grigliate

This is the perfect side dish for a summer meal. Can be cooked on a barbecue or on a grill pan on your stove.

Ingredients:

  • 2 TBSP Fresh lemon juice
  • 2 TBSP White wine vinegar
  • 1 TBSP Minced garlic
  • 2 tsp Fresh thyme
  • 1/2 cup (125 mL) olive oil
  • Salt & pepper
  • 2 lb (900 g) Zucchini

Preparation:

  1. Prepare the marinade in a large bowl. Add: lemon juice, vinegar, garlic, thyme, salt & pepper. Whisk together
  2. Slowly add in the oil while whisking.
  3. Prepare the zucchini. Wash, clean. Cut into quarters or slice lengthwise. Add the zucchini to the marinade and toss to coat.
  4. Cover and marinate for a few hours or up to a day.
  5. Grill on medium-high heat. Turning occasionally until they are browned. About 8-10 minutes.
  6. Transfer zucchini to a serving dish. Drizzle with excess marinade. Serve hot or chilled.
  7. Sprinkle with fresh thyme to serve.
